Understanding the Environmental Cost of What We Eat
When we think about fasting, we usually think about what happens inside the body: insulin falls, glycogen is depleted, fat utilization increases and ketones rise.
But fasting has another possible consequence that receives much less attention.
What happens to our environmental footprint when we eat less?
Every meal has an environmental history.
Before food reaches our plate, it may have required land, water, fertilizer, energy, machinery, refrigeration, processing, packaging and transportation. Agriculture alone is responsible for roughly one-quarter of global greenhouse-gas emissions, while around half of the world's habitable land is used for agriculture.
This gives fasting an interesting environmental dimension.
What Is a Carbon Footprint?
A carbon footprint is an estimate of the greenhouse gases associated with an activity, product or lifestyle.
For food, the measurement is generally expressed as carbon dioxide equivalents (CO₂e).
It includes more than carbon dioxide. Methane and nitrous oxide, for example, are also important greenhouse gases in agriculture.
The footprint of food can include:
- Land-use change
- Farming
- Fertilizer production
- Animal emissions
- Processing
- Packaging
- Refrigeration
- Transportation
- Retail
Consequently, the environmental impact of a meal begins long before it reaches the kitchen.
Where Does Fasting Enter the Equation?
If a person eats less food over the course of a year, fewer food resources may be required.
But there is an important qualification.
Fasting only necessarily reduces food consumption if the person does not compensate by eating substantially more on feeding days.
For example, someone who fasts three days a week but consumes almost twice as much food on the remaining days may have a very different environmental outcome from someone whose annual food consumption genuinely falls.
This is why fasting and carbon footprint should be considered together rather than assuming a direct relationship.
What We Eat Matters Too
The environmental footprint of food varies enormously between foods.
Animal products, particularly beef and lamb, generally have much higher greenhouse-gas footprints than most plant-based foods.
Therefore:
Eating less is one variable.
Eating differently is another.
A fasting person who reduces total food consumption may reduce their food footprint. But the magnitude depends heavily on what foods are being removed or retained.
